Corvina

Corvina

Habitat/distribution: brackish and inshore waters; distributed from the lower Baja through South America.

Method of harvest:   trotlines, hook and line, trawl, and nets.

Season: All year round in waters, limited only by local regulations (corvina is typically drawn from several countries)

Sustainability: Few accurate stock assessments have been made, and regulation is fragmented. However, reliable sources in countries such as Costa Rica are producing ethical and high quality products.

Cooking characteristics: excellent flavor, and very similar to cousins redfish, black drum, and speckled trout.
