Spanish Sardine (Sardinella aurita)

Habitat/distribution: all regions and seas of the Atlantic ocean, in depths of 50 to more than 400 feet.

Method of harvest: white shrimp bycatch

Season/availability:   All year, but not very common, as Spanish sardines usually inhabit deeper waters than white shrimp

Size: sardines weighing 8 ounces are not very unusual, but the average is closer to four to six ounces.

Cooking characteristics: Delicious…the best little fish there is. Use whole, filleted, smoked, cured, salted, dried, marinated, fried, broiled, stuffed…
